Baked Potato Soup

Since the weather has been a little cooler, I have been looking into some new soup recipes to try out. Dan really likes O'Charley's Baked Potato Soup so I googled it and found this recipe on allrecipes.com. It was not hard, had simple ingredients and was VERY tasty! It was estimated that the soup would be ready in 40 minutes, but it ended up taking about 2 hours. It was well worth the wait though!
Anyway, here is the recipe for Baked Potato Soup:

Ingredients:
*12 slices of bacon
*2/3 cup margarine
*2/3 cup all-purpose flour
*7 cups milk (I used Whole milk)
*4 large baked potatoes, peeled and cubed
*4 green onions, chopped
*1 1/4 cups shredded Cheddar cheese
*1 cup sour cream
*1 teaspoon salt
*1 teaspoon ground black pepper

Directions:
1. Bake Potatoes.
To bake 4 large potatoes, I washed them, coated them with vegetable oil, sprinkled with salt, wrapped them in foil, and baked them at 350* for 1 hour and 20 minutes.
 2. Peel them and cut them into cubes.
Note: We ended up snacking on the peelings while we finished the soup...it tasted similar to homemade chips.

3. Fry bacon.
I will make the entire package of bacon next time! It is really good to add on top of the soup as well as mixed in. You can never go wrong with extra bacon around here...Dan has to grab some to munch on every time he walks in the kitchen to see the progress.

4. Drain bacon, crumble, and set aside.

5. In a stock pot, melt the margarine over medium heat.
Whisk in flour until smooth.
Gradually stir in milk, whisking constantly until thickened.

6. Stir in potatoes and onions.
Bring to a boil, stirring frequently.
Reduce heat and simmer 10 minutes.

7. Mix in bacon, cheese, sour cream, salt, and pepper.
Continue cooking, stirring frequently until cheese is melted.

8. Serve.
Add extra bacon, shredded cheese, and onions if desired.

This recipe was a huge hit at our house! We will certainly be making this time and time again!
It says that it makes 6 servings and that is true...6 GENEROUS servings! We got 3 meals out of this recipe! It is VERY filling also. I only had 1 bowl at each meal while Dan had 2 and we were both pleasantly stuffed.

Dan's only advice would be to add a little more salt next time and to make more bacon! :)
Otherwise, he loved it...which makes it a success in my book!

  1. Mmmm...Potato soup is one of my favorite comfort foods! I actually just bought some stuff to make a crockpot potato soup this week. If my husband liked bacon, I would use this recipe! It looks delicious and if it tastes like O'Charley's, then I know it's good!

  2. 10 thumbs up over here! Everyone really liked it. I did not coat the potatoes like you did. I baked them a couple days in advance with the ones I baked when you were all over. I tried to peel them, but it was a bit difficult so just skipped this step and diced them with the skins and it turned out good with them on. Just made it that much quicker having the potatoes already baked and then not spending the extra time peeling them. Thanks for sharing. I will be keeping this recipe to make again in the future.
