Fruit Tarts

Here is nice little summer snack that my family enjoys. I call them Fruit Tarts, but it's more like little fruit pizzas. They are pretty easy to make too.
I mixed a recipe I found in a book and some of my Mom's advice to come up with these cute little tarts. There are a few ways to make this...the easy way, the "middle of the road" way, and the hard way. I usually do the "middle of the road" way myself.

Ingredients:
~Sugar Cookies
(easy way - buy pre-packaged cookies, middle of the road way - buy cookie dough to bake, hard way - get all the ingredients and take the time to actually make homemade cookies.)
~1/2 cup of Sugar
~1 teaspoon of Vanilla Extract
~8 oz Cream Cheese (softened)
~Fruit of you choice

Directions:
1. The first step really depends on what way you have decided to make your fruit tarts.
~If you bought pre-packaged sugar cookies, proceed to step #2.
~If you bought cookie dough, bake the dough as directed.
~If you are making homemade sugar cookies, follow whatever recipe you like for them.

I have bought pre-packed cookies before and it was really easy (and fast) to make that way. However, I usually bake cookie dough.

2. While your cookies are baking, this is a great time to wash and cut up your fruit.
I like to put pineapple, kiwi, and strawberries on mine, but you can use anything you like.
You will not need much fruit so don't go crazy buying a lot. We like fruit and ended up eating most of the leftovers in 1 day!
Note: Keep in mind that you'll need to coat bananas in lemon juice to keep them from turning brown...and you'll need to eat them all that day. I usually don't add bananas for this reason.

3. To make the "icing," mix cream cheese (softened), sugar, and vanilla together.
(The icing is the part of this recipe that I got out of a book. It said to put everything on crescent rolls though...it was not very good. That's when my Mom suggested sugar cookies. GREAT idea!)

4. Ice cookies

5. Add fruit and chill until you serve them.

You can also use the leftover fruit and icing for a dessert after dinner.
